Rosemary & Orange Olive Oil

Olive oil is known for its healthy omega fats that support cardiovascular function and circulatory health, helping to prevent heart disease, strokes, diabetes and Alzheimer’s disease. Infusing the oil with aromatic herbs and spices can elevate the health properties of olive oil further. Rosemary strengthens digestion and circulation, and also supports liver function which is important for clearing toxins like alcohol and pollution from our system. The essential oils in orange peel contain properties that bolster the immune system. This oil makes a great addition to salads or roasted winter vegetables. Use this technique to infuse different flavour combinations.

Ingredients

  • The rind of one orange
  • 4 sprigs of fresh rosemary
  • 2 tsp cloves
  • 2 star anise
  • 1 stick cinnamon bark
  • 500 ml olive oil
Course: sides

Instructions

  • Place all the ingredients in a saucepan and heat on the lowest heat the hob can produce.
  • As soon as tiny bubbles start to appear in the oil, place a lid on top of the pan and turn off the heat. Leave it for an hour.
  • Strain the oil through a sieve into a sterilised glass bottle and seal.
  • Store in the fridge and use it to dress festive salads and roasted vegetables.

Notes:
It’s very important not to heat the oil too much otherwise the oil will become damaged and toxic. Heat also destroys the nutrients in the oil, herbs and spices.
