Pomegranate & Pear Mule

Pomegranate & Pear Mule

Ingredients

  • 2 large pomegranates juiced*
  • 4-5 pears juiced*
  • small piece of ginger juiced*
  • ice cubes
  • optional: 4 tbsp homemade thyme simple syrup** or 100ml strongly brewed thyme tea with 2tbsp honey or coconut sugar if vegan stirred in (let tea cool before using)

Notes

*if you don’t have a juicer, you can blend and strain the fruit. (Store bought pomegranate juice is not recommended).
**to make thyme simple syrup, simply mix equal parts water and honey (or coconut sugar) in a pan, add fresh thyme and warm over a medium heat, stirring regularly. Only warm it enough to let the honey dissolve and have the mixture just starting to simmer. Turn off the heat and allow the thyme too steep in the syrup as it cools.
Variations:
  • to create a stronger thyme flavour, use thyme tea instead of water.
  • to make vegan, use coconut sugar instead of honey.
