Fermentation is not only a wonderful way to enhance the flavour of your meals – it’s also incredibly beneficial for your health. In this hands-on workshop, you’ll learn how to safely and confidently create your own fermented foods.

Regularly including fermented foods in your diet can help balance your gut microbiome, which plays a vital role in digestion, immunity, metabolism, and even mood. Fermented foods are rich in both probiotics and prebiotics, supporting gut health, strengthening the immune system, stabilising blood sugar levels, maintaining a healthy weight, and even reducing the risk of heart disease.

This workshop is perfect for anyone interested in health, food, and natural healing — whether you’re a complete beginner or someone with fermentation experience looking to deepen your knowledge and gain more confidence.

You’ll learn several fermentation techniques, including:

  • Dry fermenting
  • Brine fermenting
  • Fruit fermenting
  • Kimchi-style fermenting
  • Culturing – and more

This is a practical, full-day workshop where you’ll have the opportunity to make a variety of ferments yourself, take them home, and taste others on the day. You’ll learn not only how to ferment safely and effectively, but also the science and health benefits behind these traditional practices – including how fermented foods can help heal your gut and support long-term wellness.

What we’ll be making and discussing

  • Kimchi
  • Fermented pickles
  • Kombucha
  • Dairy kefir
  • Fermented nut cheese
  • Fruit ferments

We’ll start the day with a delicious fermented welcome drink and snacks, followed by a group introduction and a short talk on the benefits of fermented foods. From there, the fermenting begins! Some recipes will be demonstrated, while others you’ll make yourself.

The workshop will be delivered by Åsa Simonsson – a CNM-trained naturopath, registered nurse, natural chef, nutrition lecturer, and award-winning author of Fermentation. Åsa brings a lifetime of experience in culturing and lacto-fermentation, deeply rooted in her Swedish heritage and enriched by her professional background in health and nutrition.

A delicious, plant-based, gluten-free, and sugar-free lunch is included – along with a few delightful surprises!
